Cottage Cheese Alfredo
This cottage cheese alfredo sauce gives you everything you want from a classic alfredo. It’s creamy, rich, cheesy, and smooth, but lighter than the traditional version. The cottage cheese blends right into the sauce, so no one will even notice it’s a healthier swap. It comes together fast, works with almost any pasta, and makes an easy dinner for busy nights.

How to Make Cottage Cheese Alfredo
1. Blend the Sauce
Add the milk, cottage cheese, cornstarch, salt, freshly cracked black pepper, garlic powder, and grated parmesan to a blender or food processor.
Blend until the mixture is completely smooth and creamy. Pause occasionally to scrape down the sides with a silicone spatula so everything blends evenly.

2. Heat the Sauce
Pour the blended mixture into a small saucepan and place it over medium low heat.
Stir in your desired amount of dried basil and dried oregano. Cook gently, stirring frequently, until the sauce is fully heated through and smooth.
3. Season and Thicken
Taste the sauce and add more salt, black pepper, basil, oregano, or garlic powder if needed.
Reduce the heat to low and let the sauce simmer for about 5 minutes, stirring occasionally, until it thickens slightly.

4. Toss with Pasta and Serve
Add cooked pasta to the saucepan and toss until fully coated in the creamy alfredo sauce. Let the pasta simmer in the sauce for 2 to 3 minutes so the sauce clings to the noodles.
Top with cooked protein or vegetables if desired. Spoon extra sauce over the pasta, garnish with chopped fresh parsley, and serve warm.

Recipe Variations
Cajun Style Alfredo
Swap the basil and oregano for Cajun seasoning. Serve with blackened chicken, tomatoes, and sliced green onions for a Creole inspired pasta dinner.
Extra Nutritious Version
Use cultured cottage cheese for added probiotics and a little extra tangy flavor.
Corn Free Option
Replace the cornstarch with arrowroot powder if needed.
Serving Tips
Let the pasta simmer in the sauce for 2 to 3 minutes before serving. This helps the sauce cling better to the noodles and gives the dish a creamier texture.
Spoon any extra sauce over the top before serving and finish with fresh parsley and extra parmesan if desired.
